Baked Apples in the Crockpot {recipe} - Cooking with Anton

Anton has LOVED to cook since he was 2. Most days he asks me to help make dinner or some sort of treat.

Today we decided to use the apples we bought at Costco the other day. We wait all year Honeycrisp to come into season! We eat them like candy.

{once beginning the recipe, i realized i don't have an apple corer! so i made do with a knife.}
{my helper did a great job. we actually doubled the recipe for the filling.}
{ben drank the rest of the apple juice so i used this instead. probably even better than the juice!}
{every 5 seconds anton asked if he could eat the filling}
{still learning how to cook in high altitude. added a little extra cider.}

Ingredients
- 1/4 cup brown sugar

- 1/4 cup walnuts {chopped}
- 
2 tablespoons trans-fat free margarine

- 1 teaspoon cinnamon

- 6 Gala or Macintosh apples - we used honeycrisp {cored
}
- 1/2 cup apple juice or apple cider

- 2 tablespoons orange liquor {optional}
Directions
Preheat a large crock-pot on high heat for 30 mins and preset it for 3 hours. In a large bowl, mix brown sugar, walnuts, margarine, and cinnamon. Fill the apples with the filling and place them in the crock-pot. Pour in the apple juice or cider and the liquor, if using. Cover and cook 2 1/2 to 3 hours on high heat until the apples are soft and begin to collapse.
